Pea Pesto

It’s been awhile, dear blog. To say I’ve been busy is definitely an understatement. Two high needs kids is no joke and has me running circles 24/7. The baby is a night owl and has been staying awake until very late, then the four year old is up at dawn with limitless energy. I’m very tired.

Then, to top it all off, we have moved! Packing, moving, and unpacking with these two kiddos was more of a challenge than I ever could have imagined. Easy meals are an absolute necessity lately. 

Pesto is not only a super healthy and quick meal option, it’s also perfect for the super hot days we’ve been having when the thought of standing over a hot stove is just too much. Since today is supposed to reach 100 degrees F today, something like this yummy pea pesto is just perfect! We like it over pasta or spread on sandwiches, but it would also be yummy as a dip or slathered on grilled veggies.


Pea Pesto

Ingredients:

  • 1 cup frozen peas, steamed
  • 1-2 cups kale
  • 1/2 cup fresh basil
  • 2 cloves garlic
  • juice of one lemon
  • 1/4 cup olive oil
  • salt to taste

Directions:

  1. Blend all ingredients in a food processor and serve over pasta, spread on bread, or as a dip!
